crispy mashed potato tacos

Y’all! If you are looking for your next vegetarian taco option? Look no further.

And, if I might be so bold as to suggest these, as a great way to use up leftover mashed potatoes, without resorting to the same-old same-old re-heat (looking at you thanksgiving). Just saying.

Ingredients:

flour street tortillas

leftover classic mashed potatoes

shredded cheddar cheese

2 scallions, sliced

salt

2 cups avocado oil

avocado, sliced

cilantro

cotija cheese

crema

fresh tomatillo salsa

Directions:

Heat oil in an enamel lined heavy bottom pan.

Place a scoop of mashed potatoes inside each tortilla, sprinkle with cheddar cheese, scallions, and a pinch of salt.

Use a toothpick to close tortillas in half to seal.

Fry tortillas in batches, flipping once golden. Setting on a paper towel to dry.

Once cooked, top with scallions, cilantro, cotija and a drizzle of crema.

Dip in fresh tomatillo salsa.
