buttermilk brined air fryer whole chicken

It’s quick to prep. Takes little hands on time. And it’s perfect on it’s own as the star of dinner; or to save for salads, soups, pastas, tacos, etc.

Air fryer whole chicken will be your next favorite kitchen discovery.

Ingredients:

1 whole chicken, giblets removed

1 quart buttermilk

2 tsp dried italian parsley

1 tsp salt

1/2 tsp white pepper

2 tsp granulated garlic

4 Tbsp evoo

avocado oil spray

Directions:

Place chicken in a large ziplock bag. Add buttermilk.

Seal bag and make sure to coat chicken with buttermilk.

Refrigerate for 4 -6 hours before cooking, turning the bag occasionally to make sure buttermilk gets all over.

Preheat air fryer to 350.

Combine parsley, salt, pepper and garlic in a bowl.

Remove chicken from bag, and use paper towels to remove buttermilk and pat chicken dry.

Rub chicken all over with evoo.

Sprinkle with parsley mixture, making sure to get under skin as well as inside the bird. (You shouldn’t end up using entire mixture).

Spray inside of air fryer with avocado oil.

Place chicken, breast side down and cook for 30 minutes.

Remove chicken, flip over and return to air fryer. Cook for an additional 20 minutes, or until a thermometer reads 165. Remove from air fryer and let rest for 5 - 10 minutes before carving.
