crispy pork belly

It might not be the prettiest picture, but you get the idea of how crispy this pork belly is, right? And how tender the inside is?

Yes. This is the bomb.

Ingredients:

3 lbs pork belly

1 1/2 tsp chinese 5 spice

1 Tbsp brown sugar

2 tsp ground ginger

1/2 tsp black pepper

1 tsp salt

Directions:

About an hour or two before cooking, place pork belly skin side down on rack. Rub 5 spice, sugar, ginger, and black pepper all over the meat side. Leave in fridge uncovered.

Preheat oven to 285.

Tear a large sheet of heavy duty tin foil. Place pork belly, meat side down, in center, and fold sides in to create a tin packet that encases the belly, leaving the skin side up. This will catch all rendered fat and baste the meat with it, while it cooks.

Sprinkle salt evenly over the skin.

Place foil packet on an oven safe tray. And bake for 1 1/2 hours.

After 1 1/2 hours, check tin foil to see if meat has shrunk. Tighten packet to surround meat again. Bake for an additional 1 1/2 hours.

Turn oven up to 450. Bake for an additional 15 -30 minutes, until skin is nice and crispy, but not burned.

Remove from oven and let sit 15 minutes before removing foil and slicing.
