ground brisket sliders with caramalized shallots and whipped goat cheese

Sometimes I just outdo myself. These sliders exceeded my expectations ten-fold. And we keep having them again and again on repeat. They are just that good.

Ingredients for 8 sliders:

4 large shallots, thinly sliced

4 tsp evoo

pinch of salt

3/4 lb ground brisket

1/2 lb ground chuck

salt

8oz plain goat cheese

2 Tbsp fresh dill, minced

1 Tbs fresh chives, minced

2 handfuls of arugula

juice of 1/2 lemon

1/2 Tbsp avocado oil

pinch of salt

6 Tbsp avocado mayo

1 tsp siracha

8 brioche slider buns

Directions:

Add evoo to a saucepan. Heat on low. Add in shallots, tossing to combine. Continue to cook the shallots low and slow, stirring occasionally until caramelized. Approx 10- 15 minutes.

Combine brisket and chuck together. Form 8 same sized slider patties. Sprinkle salt on burgers.

Grill until meat thermometer reads medium. Approx 5 mins per side on medium heat.

Meanwhile, using a blender or food processor, whip the goat cheese with dill and chives, until combined and fluffy.

In a small bowl, combine mayo and siracha.

Gently toast slider buns on grill.

To compose sliders, spread siracha mayo on bottom of bun. Top with caramelized shallots. Top with burger. Spread whipped goat cheese on top of burger, and top with dressed arugula. Add top bun and serve.
