shish tawook chicken

You know we love a good food themed dinner around here. Greek, sushi, shogun, taco, italian, you name it… we love it.

And one of our newest summer grill theme obsessions is lebanese night. We’re talking skewers, tahini, tabbouleh, the whole shebang.

This shish tawook chicken is one of our fav’s. Marinated in labneh and grilled on skewers, it’s perfect served with tzatziki or creamy tahini sauce… you do you.

Ingredients:

16 oz labneh

1 tsp smoked paprika

1 tsp ground coriander

1/2 tsp white pepper

1 1/2 tsp cumin

2 Tbsp apple cider vinegar

1 tsp salt

2 Tbsp avocado oil

2 garlic cloves, minced

1 Tbsp yellow mustard

2 Tbsp tomato paste

about 2lbs chicken breasts (3 -4), cubed

Directions:

Add labneh to a large bowl. Add paprika, coriander, pepper, cumin, vinegar, salt, oil, garlic, mustard and tomato paste. Stir until fully combined.

Add in cubed chicken and coat with marinade.

Refrigerate for 1 hour before cooking.

If using wooden skewers, this is a good time to soak them in cold water before grilling.

Wipe excess marinade off of chicken, and place cubes on skewers. (Don’t worry if you don’t get all the marinade off… you don’t have to be perfect).

Preheat grill to high. Spray with avocado oil.

Grill chicken for 5 minutes, then flip. Grill another 5 minutes, then flip. Grill for an additional 5 minutes, and remove to the top shelf. Grill for 5 more minutes.

Remove from grill and serve.
