grilled sesame chicken

We are smack in the middle of summer. I don’t know about you, but for my family, summer means grilling. Not only are we trying to keep the interior heat down in the kitchen but grilling outdoors while kiddos are swimming in the pool, is the epitome of summer vacation.

Grilling doesn’t have to be fussy, and when it all comes down to it, it’s all about your marinade. Which really means that you could eat grilled chicken every day of the week and never have it taste the same.

This is my sesame chicken marinade, or as my daughter has termed it, “the yummy chicken.”

Ingredients:

6 breasts of chicken

1/2 cup kewpie mayo

1/2 cup mirin

1/8 cup sesame oil

juice of 1 lime

1/4 cup coconut aminos

1 tsp fish sauce

1 1/2 tsp ground ginger

Directions:

Whisk together all ingredients besides chicken. Add chicken to a large ziplock bag and pour marinade over top. Seal and refrigerate for 2 hours prior to cooking.

Directions:

Preheat grill to high.

Sear chicken on both sides, about 5 minutes each. Once grill marks have registered on both sides, remove to upper shelf, and continue to cook until internal temp reaches 165 degrees.

Remove from grill. Let rest for 5 minutes before serving.
