asparagus with immersion blender hollandaise, crispy prosciutto, and truffle carpaccio

I know asparagus can be quite controversial, considering the, erm, changes it can cause to one’s self. But it really is an under rated vegetable. We love it simply grilled, roasted, however you can get it, especially if you are prepping it correctly. But, if you really want to kick it up a notch, then this is the play for you.

Just make my quick and easy immersion blender hollandaise and smother your asparagus with it, top with some crispy prosciutto and truffle carpaccio and you’ve got a dish to make gordon ramsey jealous.

Ingredients:

2 bunches of large asparagus

3 Tbsp evoo

truffle carpaccio

3 slices of crispy prosciutto

Directions:

Toss asparagus in evoo. Grill on medium high heat, until asparagus has grill marks and has softened. You could also steam or roast asparagus, if you prefer.

Pour sauce over asparagus, and top with truffle carpaccio (I get mine at costco), and crispy prosciutto.
