salmon poke

I just love a good poke. Thankfully, so does the rest of my family. And, it makes a great addition to at home sushi night. Or make your own poke bowl night. Either one.

Ingredients:

1/2 cup coconut aminos

1/2 tsp fish sauce

juice of 2 limes

1/2 tsp wasabi paste

1 Tbsp honey

1/4 cup mirin

1 Tbsp sesame oil

1 1/2 cups of cubed sashimi grade salmon

dark green parts of 3 scallions, sliced

1 large avocado, peeled, pitted, and cubed

small handfull of micro greens

1/2 Tbsp furikake seasoning

Directions:

In a medium sized bowl, whisk together coconut aminos, fish sauce, honey, lime juice, wasabi, mirin, and sesame oil.

Add the remaining ingredients, and stir to combine.

Refrigerate at least 1 hour before serving.
