It’s not only ridiculously tasty, but it tastes best at room temp, which makes it the perfect cake to make ahead of whatever celebration you’ve got planned.

Ingredients:

1 cup white polenta

3/4 cup flour

2 tsp baking powder

2 eggs

3 egg whites

1 cup sugar

1/4 cup avocado oil

4 Tbsp melted salted butter

1/2 cup sour cream

1/4 cup whole milk

2 Tbsp tangerine juice

Directions:

Preheat oven to 350.

Pour a little bit of avocado oil on a paper towel, and wipe the inside of a 8 inch cake pan.

Whisk together polenta, flour, and baking powder.

Using an electric mixer, whisk together eggs, egg whites, and sugar until eggs have lightened and are fluffy.

Add oil, butter, sour cream, milk and orange juice to egg mixture. Whisk to combine.

Slowly fold in dry ingredients.

Pour batter into cake pan.

Bake for 25 - 30 minutes, testing for doneness with a tooth pick.

Remove from oven and cool to room temp before serving.
