new york steak with mushroom sauce

I can’t imagine a more perfect valentines day or special occasion dish than a good new york steak. And this is a good new york steak.

It’s decadent, but also easily executed. And even better topped with a mushroom sauce.

Ingredients:

3 thick new york steaks

salt and pepper to season

evoo

2 cloves garlic, peeled and smashed

2 sprigs rosemary

4 Tbsp butter

12 oz shiitake mushrooms

1 cup beef broth

1 cup white wine

1 Tbsp worcestershire sauce

1 Tbsp butter

Directions:

Preheat oven to 400.

Season steaks with salt and pepper on both sides, according to preference.

Coat the bottom of a large cast iron pan with evoo and heat on stove on high.

Sear both sides of steak. Turning when browned. Turn heat to low, and add garlic, rosemary and butter.

When butter has melted, spoon over top of steaks. Flip. Spoon butter over other side.

Place pan in oven, on middle shelf, for 7 minutes.

Remove from pan and tent with foil to cover. Let rest before slicing.

While steak is resting place pan back on stove. Turn heat to medium. Add in shiitakes, and saute for 3 minutes. Add in broth, wine, worcestershire, and 1 Tbsp butter. Bring to a boil, whisking occasionally. Sauce will thicken slightly. Remove from heat.

Slice steaks, and top with mushrooms and sauce.
