smashed baby red potatoes

Who doesn’t love a good side potato. Pretty much compliments anything you could possibly make.

And what’s great about these potatoes, is that while you can make them as part of your meal; you can also make them ahead of time, and set aside to simply crisp up in the oven day of.

For me, it’s a perfect side for christmas day, when I want to spend time with my family without loosing time to the kitchen.

I think they also play nicely for a homecooked valentines dinner; when you want to spend your focus on a rich piece of meat or fish, and not on a side dish.

Ingredients:

1 bag baby red potatoes

avocado spray

3 Tbsp evoo

1 1/2 tsp trader joe’s onion salt

1 1/2 tsp paprika

1/2 tsp salt

Directions:

Preheat oven to 450.

Add potatoes to a large pot of cold water.

Bring water to a boil. Boil until potatoes are easily pierced by a fork.

Cover a large sheet pan or two with tin foil. Spray with avocado oil.

Space out cooked potato on tin foil. Use a pounder, or heavy drinking glass to smash potatoes.

(At this point you can cover potatoes and refrigerate over night until time to cook the next day, if you so choose).

Drizzle potatoes with half the evoo and spices. Rub in, and flip over potatoes. Drizzle with remainder of evoo and spices, rubbing in to the opposite side.

Bake in the oven until crispy- checking after 10 minutes, and then continuously until browned; once crispy on one side flip over and continue to crisp the other side if needed.
