crispy chicken wings

Who doesn’t love a good chicken wing?

And I’ll tell you, at any given time, I’ve got several recipes testing.

These particular wings, are crispy, without being overly breaded, and lend themselves nicely to taking on the flavor of different sauces and flavors after the fact.

However… they are also perfection on their own.

Ingredients:

approximately 30 wings (drumettes and flats alike- your preference or a mix)

1 quart buttermilk

1 cup half and half

2 Tbsp evoo

1 tsp salt

12 oz pork panko

2 Tbsp trader joe’s onion salt

1 Tbsp paprika

Directions:

In a large bowl, whisk together buttermilk and half and half.

Add in chicken wings, tossing to coat.

Let marinade in fridge for minimum 1 hour.

Preheat oven to 450.

Drain chicken wings.

Pat dry.

Toss with evoo and salt.

In a large bowl, whisk together pork panko, onion salt, and paprika.

Dredge wings through the panko mixture and place on foil lined oven safe tray.

Bake on lower rack for 20 minutes.

Move to top rack for 5 - 10 minutes, until chicken is golden brown and crispy.
