briami

One of my favorite vegetable sides, is briami. It’s a mediterranean dish comprised of squash, tomatoes, and bell peppers. Similar to ratatouille with the addition of olives.

Ingredients:

2 cloves garlic, sliced

1 zucchini, sliced

2 roma tomatoes, chopped

1/2 large eggplant, chopped

2 red bell peppers, stemmed, seeded, and chopped

1/3 cup olive brine

15 castelvetrano olives, pitted and halved

16 oz pizza sauce

1 cup vegetable stock

Directions:

Preheat oven to 450.

In an oven safe baking pan, combine garlic, zucchini, tomatoes, eggplant, peppers, olive brine, olives, and pizza sauce.

Bake for 20 minutes.

Add in stock, and stir to combine.

Bake for 20 minutes. Stir.

Bake for 20 more minutes.

Remove from the oven and serve.
