sardine caesar dressing

There’s traditional caesar dressing, and then there is caesar dressing made with sardines instead of anchovies.

Sardines make the dressing a little less fish-umami for those who might be squeamish about it. But still provide dressing with all that unctuousness we love. I like to add a little worcestershire sauce to up the umami a tad, as well.

Ingredients:

2 egg yolks

juice of 1 lemon

1 tsp lemon zest

1/2 sardine filet

1 tsp dijon mustard

1/2 tsp worchestershire

3 tbsp freshly grated parmesan reggiano cheese

2 cloves of garlic, smashed

1/2 tsp black pepper

1 tsp salt

1/3 cup avocado oil

2 Tbsp evoo

Directions:

In a glass mason jar, or similar, add egg yolks, lemon juice, zest, dijon, sardine, garlic, black pepper, salt, parmesan, and worcestershire. Use an immersion blender to combine all dressing ingredients.

Slowly add in oils to emulsify the dressing.
