caramelized mushrooms and onions

Y’all know I love a good steak. I can eat them plain, topped, at home, out… all jooshed up in sliders, tacos, or baos… you name it, I’ll eat it.

One of my favorite ways to enhance the steak flavor is an easy one. To caramelize mushrooms and onions slowly over the stove, and then to pour them over your favorite steak. Or chicken. Or fish. Or arugula. Or in a taco.

Like seriously. This is one of those easy recipes that you can adapt to whatever you are making.

Ingredients:

2 Tbsp evoo

1 Tbsp butter

1 red onion, peeled, halved and sliced

12 oz assorted mushrooms

1 tsp salt

1 Tbsp sherry vinegar

1 Tbsp chicken stock

Directions:

In a large sauce pan, heat up evoo until shimmering over medium heat. Add in butter, and let melt.

Add sliced mushrooms. Toss with oil and butter. Turn heat down to low. Sauté for 15 - 25 minutes until softened and slightly browned.

Add in mushrooms. Continue to sauté on low for 15 minutes.

Add in salt. Toss.

Sauté another 15 minutes. Add vinegar and stock. Stir to combine.

Remove from heat and serve over steak, or reserve for whatever dish you wish.
