chocolate mousse

Need a quick and easy make ahead dessert for your next gathering?

Look no further than this chocolate mousse.

Rich, decadent, and so, so tasty, you can easily make it ahead of time, and set it in the fridge until you are ready to serve it.

Ingredients:

16 oz semi sweet chocolate

6 Tbsp butter

1 Tbsp white rum

2 tsp vanilla

4 Tbsp sugar

6 egg yolks

1/2 cup cream

2 1/2 cups cream

2 Tbsp sugar

Directions:

Melt chocolate. I like to microwave it, stirring every 30 seconds until completely melted.

Once chocolate has melted, add in butter, vanilla, and rum, stirring until butter has melted and is completely combined.

Heat water to boil in the bottom of a double broiler. Once boiling, add 4 Tbsp sugar, yolks, and 1/2 cup cream in second pot over top of boiling water. Whisking the whole time until mixture has lightened in color, but is still liquid.

Add in chocolate mixture. Whisk to combine. Remove from heat and set aside to cool.

Using a stand mixer, whip 1 1/4 cup cream with 1 Tbsp sugar until it forms stiff peaks.

Gently fold in chocolate mixture.

Spoon into ramakins or other small serving bowl. Refrigerate until ready to serve.
