bbqish grilled chicken

As long as it’s warm enough, we’re still grilling. And right now it’s not only warm enough to swim in the evenings, but it’s warm enough to grill into the night.

And that’s where these bbqish grilled chicken breasts come into play. Bbqish, because the marinade is not a true bbq sauce, but similar flavors. And easier. Which lets face it, we all want.

Ingredients:

approx 1 lb chicken breast (2 large breasts)

1 cup ketchup

3 Tbsp yellow mustard

2 Tbsp honey

1 1/2 tsp worcestershire sauce

3 Tbsp apple cider vinegar

1 tsp salt

Directions:

Slice chicken breast diagonally into large strips.

In a medium sized bowl, whisk together ketchup, mustard, honey, worcestershire, vinegar and salt.

Add chicken to bowl and coat to marinade. Set in fridge for 1 hour prior to grilling.

Heat grill to high.

Remove chicken from marinade, wiping off excess.

Grill 5 minutes at a time, flipping three times, for a total of 20 minutes.

Make sure chicken is cooked to an internal temp of 165.

I like to serve with some pretzel rolls and a side of buttermilk ranch dressing.
