lemon chicken

Y’all know we love a good take-out theme night around here; and one of our fav’s is chinese at home. Pf changs used to have this great dish that we all loved called philips better lemon chicken. It’s not on the menu any more, but we always reminisce about it, and so obviously I had to make my own version.

Ingredients:

4 chicken breasts, cut in bite sized pieces

2 Tbsp casava flour

1 tsp salt

1/4 tsp white pepper

1 Tbsp sesame oil

4 Tbsp evoo

2 garlic cloves, minced

1 inch knob of ginger, minced

1 whole lemon, ends removed, quartered and thinly sliced

2 Tbsp honey

1 tsp fish sauce

2 Tbsp coconut aminos

juice of 1 lemon

zest of 1/2 lemon

1/3 cup chicken stock

Directions:

Toss chicken pieces with casava flour, salt and pepper.

Heat a large sauce pan over medium heat.

Add oils and cook until shimmering.

Add ginger and garlic, stirring to prevent burning.

Add in chicken, and sautée until chicken starts to brown.

Add in lemon slices, stir to combine, and turn to low heat.

Whisk together honey, fish sauce, coconut aminos, lemon zest, lemon juice, and chicken sauce.

Pour sauce over chicken and lemon.

Sautée for 3 -5 minutes until sauce thickens and coats everything.
