salsa fresca

Thank goodness for southern california, where we can eat and enjoy fresh tomatoes throughout the year. Because your girl loves a good fresh tomato… pretty much every single day, and twice on tuesdays.

Ingredients:

1/2 jalepeno, minced

1 1/2 roma tomatoes, chopped

1 shallot, minced

zest and juice of 1 lime

1/2 tsp salt

handful of cilantro leaves, rough chopped

Directions:

Toss all ingredients together in a non-reactive bowl. Serve with tacos, over fish, next to chicken. You name it.

Or, just enjoy as is, with a handful of tortilla chips.
