chicken salad with roasted orange citronette dressing

You guys!

I can’t even tell you how good this salad is. We start by marinating chicken breast in oj and spices and then slow roast it over oranges, fennel, shallots and garlic.

Then we take some of those roasted shallots and garlic and use them to create the most flavorful citronette salad dressing. Like the best.

Ingredients:

orange roasted chicken

1 roasted shallot

1 roasted garlic clove

1/4 cup avocado oil

1/4 cup fresh squeezed orange juice

1 1/2 Tbsp grainy mustard

1 1/2 Tbsp honey

pinch of salt

1 head frisee

1 bulb fennel, thinly sliced

2 oranges, supremed

1 avocado, sliced

1/2 shallot, thinly sliced

6 pitted castelvetrano olives, thinly sliced

handful sunflower seeds

fennel fronds

Directions:

Use an immersion blender to combine roasted shallot, garlic, oil, oj, mustard, honey, and salt.

Toss or plate frisee, fennel, fresh shallot, oranges, and avocado.

Top with sliced chicken, olives, sunflower seeds, and fennel fronds.

Drizzle with dressing to preference.
