orange roasted chicken

Why do oranges and chicken pair together so well?

I have no clue, but I definitely took advantage of that pairing here, by using quartered oranges as a roasting vehicle for (wait for it) orange juice marinated chicken breasts.

Flavor. Bomb.

Ingredients:

1 Tbsp fennel seed

2 cups orange juice, fresh or store bought

2 Tbsp honey2 Tbso dijon

1/4 cup avocado oil

4 chicken breasts

2 bulbs of fennel, quartered

4 shallots, halved

4 cloves of garlic, peeled

2 oranges, quartered

1/2 cup chicken bone broth

pinch of salt

Directions:

Whisk together fennel seed, orange juice, honey, dijon, and avocado oil.

Pour into a ziplok bag, and add chicken breast.

Seal and refrigerate for 2 - 3 hours.

Remove from fridge.

Preheat oven to 420.

In a shallow roasting pan add fresh fennle, shallots, garlic, and oranges.

Top with chicken skin side down.

Add bone broth to the pan, and sprinkle everything with a pinch of salt.

Roast for 20 minutes.

Flip chicken over and continue to roast until chicken reaches 165, about 30 more minutes.

Remove from oven and let rest for 10 minutes before slicing and serving.
