air-fried pork eggrolls
I always keep ground meats in the freezer “just in case.” And one of my favorite things to do with ground pork? Is to thaw that puppy out and make some egg rolls.
Egg rolls are the perfect snack, app, and passed holiday treat.
And you should not be intimidated making them at home. It’s so easy. And well worth the effort - which, when you are using store bought egg roll wrappers and your air fryer leads to relatively no effort at all.
Ingredients:
1 clove garlic, minced
1 inch ginger knob, minced
1/4 cup coconut aminos
1 tsp fish sauce
1 Tbsp sesamie oil
1 Tbsp avocado oil
1 lb ground pork
1 bag coleslaw mix
1/2 bunch cilantro leaves
4 scallions, sliced
1/2 tsp black pepper
egg roll wrapper
evoo spray
Directions:
Whisk together garlic, ginger, coconut aminos, fish sauce and sesame oil. Set aside.
Heat 1 Tbsp avocado oil in a large sauce pan until shimmering. Add in pork and cook until golden brown.
Once browned, add in coleslaw mix, cilantro, scallions, and ground pepper. Stir to combine, and cook until vegetables have softened.
Add sauce, and stir to mix. Remove from heat. Let cool a bit.
Lay out egg roll wrapper, with corner pointing to you. Wet corner furthest away from you with water. Add two spoonfulls of ground pork mixture. Use an envelope fold to enclose and roll wrapper, sealing with water corner.
Preheat airfryer to 385.
Spray tray with evoo. Place egg rolls inside. Spray tops.
Air fry for 5 minutes.
Flip.
Air fry for 5 more minutes or until golden brown.
Serve with sweet and sour sauce.
