true blue tartare

When I was a kid, i used to sneak bites of the raw ground beef before it went into what ever meal I was cooking.

So is it any suprise that now I know better, I still gravitate toward tartare?

And this tartare? The bomb.

The true blue yolk is smaller than your traditional egg; but not as small as a quail egg… so you get your bindder, flavor bomb, and unctioiusness in the perfect amount.

Ingredients:

avocado oil

1 shallot, thinly sliced

1 cup minced filet mignion

2 Tbsp minced truffle

1 Tbsp minced cilantro

1 tsp grated ginger

1 tsp fish sauce

2 Tbsp creme fraiche

1 tsp rice wine vinegar

1/2 Tbsp chives

1/2 tsp truffle salt

1 yolk vital farms true blue egg

rye bread

butter

golden osetra caviar

Directions:

Heat a small fry pan with 1 inch avocado oil until shimmering.

Add in sliced shallot, and cook until golden. Mince.

Combine all ingredients through yolk together.

Slice rye bread and spread with butter.

Use an air fryer to toast until butter is melted.

Top tartare with caviar and serve with toasted bread.
