buttermilk coleslaw
What’s a bbq without slaw? It’s the perfect side for fried chicken, steak, burgers, hot dogs, you name it.
Perhaps that’s why I have so many versions of them on this website?
Here’s my current fav combo.
Ingredients:
2 oz mayo
2 oz buttermilk
2 oz red wine vinegar
handful fresh dill
handful fresh italian parsley
2 tsp dried basil
1 tsp dried tarragon
1 tsp salt
1 Tbsp sugar
2 small garlic cloves
1 small shallot
1/2 cup shredded carrots
handful cilantro leaves
5 scallions, sliced on a bias
1/2 cucumber thinly sliced
1/2 head cabbage thinly sliced
Directions:
Using an immersion blender combine mayo, buttermilk, vinegar, dill, parsley, basil, tarragon, salt, sugar, garlic, and shallot.
Toss together carrots, cilantro, scallions, cucumber and cabbage. Slowly add dressing until veggies are coated.
Let sit in fridge for a few hours before serving.
