vanilla bean pudding with a sugared peach basil balsamic topping
Remember when you were a kid, and there was nothing better than a pack of instant pudding and a box of vanilla wafers?
This is that, turned on it’s head. With an added sugared peach basil balsamic twist.
Ingredients:
2 peaches, diced
1 1/2 Tbsp sugar
1 tsp balsamic vinegar
2 basil leaves, thinly sliced
2 egg yolks
2 Tbsp tapioca starch
1/2 cup sugar
pinch of salt
2 cups whole milk
1/2 cup heavy cream
1/2 Tbsp vanilla bean paste
1 Tbsp buttercr
1 cup crushed vanilla wafers
Directions:
Stir together peaches, sugar, balsamic and basil. Set aside.
Heat a stock pot over high heat. Add eggs, sugar, salt, and tapioca. Whisk together. Slowly add in milk and cream, whisking to combine (and to prevent lumps). Bring to a boil.
Once pudding has thickened enough to coat the back of a spoon, remove from heat and let cool.
In small glasses layer wafers, pudding, wafers, and pudding. Crumble a tiny bit more wafer, and then top with spoonfuls of the peach mixture.
This should make 4 separate desserts.
