lobster tacos

‘Cause on tuesday’s we eat tacos. And when we make them with lobster? We are doing it the socal way.

Ingredients:

6 lobster tails

1 cup butter

1 cup white wine

1/2 tsp salt

1 cup corn kernels, removed from cob and blanched

12 cherry tomatoes, quartered

juice of 1 lime

1/4 serrano, thinly sliced

1/2 shallot, thinly sliced

handful cilantro leaves, rough chopped

1 small clove garlic, minced

2 Tbsp avo oil

1/2 tsp salt

elote sauce

street taco tortillas

sliced avocado

Directions:

In a grill safe pan, add lobster meat, butter, wine, 1/2 tsp salt and grill until cooked through.

Toss together corn, tomatoes, serrano, juice, shallot, cilantro, garlic, avo oil, and 1/2 tsp salt.

Heat tortillas. Top with avocado slice, lobster, corn salsa, and top with elote sauce.
