meatloaf meatball sliders

My dad made a mean meatloaf. And the best part of his meatloaf was the sandwiches we’d have the next day. Loaded with mustard, ketchup, and pickles it was the perfect sandwich.

I’ve mentioned before that two of my kiddos don’t like ground beef, they don’t like meat sauce, and 1 of them doesn’t like meatloaf… but make it into a meatball, and we get no complaints.

I’ve got a recipe for a traditional meatloaf meatball on the website; however this one is a little less fancy, and a little bit easier for easy weeknight meals, and makes a bunch for easy freezing, leftovers, or even entertaining.

Ingredients:

3lbs ground beef

1 1/2 cups pork panko

3 Tbsp yellow mustard

1/4 cup ketchup

2 eggs

1 tsp salt

1/2 tsp ground black pepper

3 green onions, green and light green part, sliced

1/2 tsp celery salt

hawaiian sweet rolls

grillos pickle chips

mustard

ketchup

Directions:

Preheat the oven to 450 degrees.

Line two baking sheets with tin foil.

In a large bowl, combine all ingredients together with your hands.

Use a medium cookie scoop to form meatballs. This should make approx 30.

Place one tray on the top rack, and one on the bottom rack.

Bake for 10 minutes.

Rotate trays.

Bake for an additional 15 minutes.

Remove meatballs from oven.

Slice hawaiian sweet rolls in half. Spread ketchup on the top bun. Spread mustard on the bottom bun, and top with pickle slices.

Place a meatball on top of pickles.
