chocolate covered bacon maple ice cream
Every summer when the kids were little I used to take them to the del mar far (yes, the del mar fair, not the san diego fair). And their most favorite thing was buying a box (or two) of chocolate covered bacon.
Best fair treat ever.
Even my non-bacon loving kiddo loved it.
So I thought it might just make for the perfect nostalgic summer ice cream flavor, ever. Period. Hard. Stop.
Ingredients:
2 cups heavy cream
2 cups whole milk
1 cup granulated sugar
1/4 tsp salt
1 tsp vanilla paste
8 egg yolks, whisked together
12 oz milk chocolate
2 Tbsp butter
6 pieces cooked bacon
2 Tbsp maple syrup
Directions:
Whisk together cream, milk, sugar, salt, and vanilla.
Bring to a boil.
Once boiling, turn heat down to simmer.
Temper eggs, by slowly whisking in hot mixture a tiny bit at a time, to bring eggs up to tempurature.
Add egg mixture back to pan, and bring to boil once more. Whisking the whole time.
Once mixture coats the back of a spoon, remove from heat.
Strain into a large bowl. Cover, and refrigerate overnight.
Break chocolate into pieces and add to a large bowl. Add butter.
Microwave in 30 sec increments, stirring between each time, until melted and combined.
Coat bacon with chocolate and set on a parchment lined tray.
Freeze until chocolate has set. Break into small pieces.
Using a kitchen aid or similar ice cream attachment, stir for about 25 minutes, until the consistancy of soft serve. Add in chocolate bacon pieces and stir for an additional 2 minutes.
Drizzle in maple syrup for one or two stirs. Remove from attachment and spoon into freezer safe storage. Cover and freeze for 3 - 4 hours before serving.
