peach cobbler

I’m not much of a pie person. I prefer less crust, more filling - thus the open pies like pumpkin, chocolate cream, etc. Or the top only ones like crumbles and cobblers.

And this peach cobbler? When I tell you this is the dessert you want to take to your next bbq, potluck, or on a picnic? Trust me. It’s the truth.

Ingredients:

8 peaches, pitted and sliced

1/2 cup granulated sugar

1/4 tsp cinnamon

1/4 tsp nutmeg

juice of 1/2 a lemon

1 1/2 cups cake flour

1/2 cup granulated sugar

1/4 cup brown sugar

1 1/2 tsp paking powder

1/2 tsp salt

1 stick unsalted butter, melted

3/4 cup half and half

Directions:

Preheat oven to 400 degrees.

Add peach slices to a deep oven safe dish.

Toss with 1/2 cup sugar, cinnamon, nutmeg and lemon juice.

In a bowl combine flour 1/2 cup granulated sugar, brown sugar, baking powder, salt, butter and half and half.

Place spoonful’s of topping mixture over peaches to cover.

Bake until golden brown… about 45 minutes.
