quick and easy vegetarian ramen
Every once in a while, we all need a little help from our friends. And in this case, my friend is mikes mighty good vegetarian miso ramen noodle soup. The pillow pack version.
Ingredients:
4 packs of mikes mighty good vegetarian miso ramen noodle soup, cooked according to directions
1 pack extra firm tofu, patted dry and cubed
1 bunch scallions, thinly sliced
1 bunch cilantro, stems discarded, leaves rough chopped
Directions:
Cook ramen according to directions.
Portion into 4 - 6 bowls depending on if main course or appetizer portion. Divide tofu, scallions, and cilantro among bowls.
Serve while warm.
I like to add a splash of soy, but you do you.
