stuffed jalapenos

There are jalapeño poppers… and then there stuffed jalapeños. The difference? Stuffed jalepenos are a whole lot less time consuming and give you twice the bang for your buck.

No hollowing out, no frenetic scraping with the smallest knife you can find to get all the seeds out… no limiting of ingredients. You can really stuff, because you are just filling a half shell at a time.

Ingredients:

6 jalapeños

1 green onion, sliced

8 oz cream cheese

4 pieces of cooked bacon, diced, divided use

shredded cheddar cheese

Directions:

Preheat oven to 400.

Slice peppers in half. Spoon out seeds, and rinse. Set on a oven safe baking tray that has been sprayed with avocado oil.

Mix together onion, cream cheese, and 2 diced pieces of bacon.

Fill each half of the peppers with cream cheese mixture.

Sprinkle cheddar cheese over the top to cover. Top with remaining bacon pieces.

Bake for 20 minutes, until cheese has melted and started to turn golden brown.

(Can omit bacon for vegetarian).
