huckleberry chicken sliders

One of jamie’s newer clients is from montana; and as such, they sent us a montana care package to “introduce” us to the state.

Part of this care package was all things huckleberry. Something we don’t have a whole lot of down south. So what’s a cooking girlie to do? My mind immediately went to chicken, and sliders.

Ingredients:

2 chicken breasts

huckleberry vinaigrette

french dinner rolls

grainy mustard

huckleberry jam

brie, sliced

arugula

Directions:

Place chicken breasts in a large ziplock bag. Add vinaigrette. Let marinate in fridge 4 - 6 hours.

Preheat oven to 420.

Cook chicken until it reaches an internal temp of 165. About 40 minutes.

Remove from oven and slice.

Halve rolls.

Spread one side with mustard. The other with jam.

Layer chicken breast, brie, and arugula. Top with bun.

Place in oven until cheese has melted and sliders are warm through.
