chicken and broccoli

This is such a simple week night dinner, that makes everyone happy. My kids call it, “the really good chicken.”

We get such great broccoli in our csa box that this meal is on constant rotation.

Ingredients:

3 chicken breasts

2 small or one large broccoli floret

1 tsp salt

1 Tbsp dried ginger

1 clove garlic, minced

juice of 1 lemon

2 Tbsp mirin

2 Tbsp soy sauce

1 tsp trader joe’s onion salt

2 oz water

2 Tbsp sesame oil

DIrections:

Slice chicken breasts into bite sized pieces, and toss with salt.

Cut broccoli into bite sized pieces.

In a small bowl, whisk together ginger, garlic, lemon juice, mirin, soy sauce, water and onion salt until combined.

Bring sesame oil to shimmering in a large sauce pan over medium high heat.

Add chicken, and sauté until chicken is browned.

Once browned, add in broccoli and sauce. Stir to combine.

Turn down to low. Cover and let simmer for 5 minutes until broccoli is fork tender.
