homemade pita bread

Greek nights are a regular around here. And part of what makes a great greek night is great pita.

Regardless of if it’s souvlaki, or gyros, or lamb chops, tzatziki or humus, it all works equally well with pita bread. Especially homemade pita bread. Nothing tastes better than when it first comes out of the oven, nice a warm.

Ingredients:

1 pack active dry yeast

1 tsp sugar

1/4 cup lukewarm water

3/4 cup lukewarm water

1 tsp salt

3 cups all purpose flour

Directions:

Whisk together yeast, sugar, and 1/4 cup water. Cover and let yeast bloom. About 10 minutes.

Add remaining water, 1 tsp salt and flour. Using the dough hook in a stand mixer, knead on low 5 - 10 minutes until dough comes together in a ball.

Place dough into an oiled bowl, and cover.

Let rise until dough has doubled, about 1 1/2 hours.

Once risen, punch down.

Divided dough into 10 same-sized balls. Place on parchment lined baking sheets. Cover and let rise again.

About 30 minutes.

Preheat oven to 450.

Roll dough out into ovals, about 1/4 inch thick.

Bake 5-7 minutes on each side, until starts to turn golden brown in spots.
