lamb meatballs

Love a good greek night around here; and while there is such a thing as a good store bought gyro that you can heat up on the stove top, lamb meatballs are another favorite thing.

Also, my non-gyro eater, has no problem with lamb, as long as it comes in meatball form.

Ingredients:

2lbs ground lamb

2 Tbsp chopped mint

2 Tbsp chopped fresh oregano

2 Tbsp chopped dill

3 Tbsp chopped scallions

1 egg

1 tsp salt

1/4 tsp pepper

2 cloves of garlic, minced

1 tsp horseradish

Directions:

Preheat oven to 450.

Cover two baking sheets with tin foil. Spray with avocado oil. You want baking sheets that have a slight lip, to catch drippings.

Place lamb in a large bowl. Add all other ingredients. Combine using your hands, being careful not to over mix.

Using a medium cookie scoop, scoop mixture into balls, using your hands to fully round the shape, before placing on tin foil.

Place trays in top 1/3 of your oven.

Bake for 20 minutes, and slightly browned.

Flip meatballs over. Bake for an additional 10 minutes, and for underside to brown.

Remove from oven.
