basil chimichurri

Unlike a typical chimichurri, this one’s made with basil.

Like a typical chimichurri, this one makes the perfect marinade. It’s also excellent over steak, lamb, chicken, or fish… it’s the perfect sauce for everything.

Ingredients:

leaves from 1/2 bunch italian parsley

3 handfuls of fresh basil leaves

4 cloves garlic, peeled

1 shallot, quartered

1/4 cup sherry vinegar

1 tsp salt

1/2 tsp black pepper

3/8 cup avocado oil

Directions:

Add all ingredients, except oil to a food processor.

Turn processor on low, and slowly drizzle oil in.

Once everything is combined, turn processor off.

This is meant to be somewhat chunky, and not 100 percent smooth, so make sure not to over blend.
