bechamel

Mother sauces, here we come.

The base to your white pizza. The layer to your lasagna. The start of an epic mac and cheese.

This bechamel is what you all need in your repertoire.

Ingredients:

4 Tbsp butter

4 Tbsp ap flour

1/4 tsp ground nutmeg

1/2 tsp sat

1/4 tsp white pepper

1 cup whole milk

1 cup heavy whipping cream

1/2 cup chicken stock

Directions:

In a large saucepan over medium heat, melt butter.

Whisk in flour, 1 Tbsp at a time, until fully incorporated.

Whisk in pepper, salt and nutmeg. Continuously whisking over heat to cook out flour and to prevent burning.

Add in small amounts of milk, cream, and stock. Whisking until incorporated. Continue adding in small amounts, and whisking until liquids have been used.

Turn heat to high and bring to a boil. Then remove from stove and use or refrigerate for further use.
