imitation crab salad

Working from home, I’m always looking for a quick, easy and light lunch option. One that’s hearty enough to fill up the hubs, who also works from home.

This imitation crab salad is the perfect option. Why imitation crab? Because personally I think the flavor works better with a fresh vinegar based dressing v/s real crab which lends its flavor better to a mayo based dressing.

I also like a lighter salad during the day.

Ingredients:

12 oz flake style imitation crab

2 roma tomatoes, seeded and diced

1 english cucumber, peeled, seeded and diced

6 green onions, whites removed, sliced

1/2 cup packed cilantro leaves, chopped

juice of 1 lime

1 Tbsp avocado oil

1 Tbsp rice wine vinegar

1 tsp sugar

1/4 tsp salt

2 avocados, peeled, pitted and halved

Directions:

In a medium bowl, shred flaked crab with forks. Add tomatoes, cucumbers onions, and cilantro. Toss to combine.

Whisk together lime juice, avocado oil, vinegar, salt and sugar. Toss with crab mixture.

Spoon crab salad into avocado halves. Don’t be afraid to over scoop.
