quick and easy pizza bites

Football season is upon us. And what better way to celebrate your favorite teams, than with some easy to prepare, and even easier to share, snacks?

These individual pizza bites are made by wrapping pizza dough (store bought or homemade) around string cheese… with or without your choice of pepperoni. I usually do 1/2 and 1/2 to make everyone happy. And let’s face it, you could really stuff anything around the cheese.

I can see spinach, artichoke hearts, or canadian bacon being good options. You do you.

Ingredients:

1 serving pizza dough

1 package string cheese, each log cut into 4ths

1 package of pepperoni, if you so choose

avocado oil

1/4 cup melted butter

pizza sauce for dipping, store bought or homemade

pesto for dipping, store bought or homemade

Directions:

Preheat oven to 450.

Tear off a small amount of pizza dough. You only need enough to completely cover the string cheese.

Surround a piece of cheese, and pepperoni (if you choose to use it) with the pizza dough and place on a tin foil lined tray, that’s been sprayed with avocado oil.

Since we’re talking football, I attempted placing mine in a football shape. Really you could make them into anything, as long as you allow a little space between each bite to allow for rising. Hello holiday christmas tree…

Once all the bites are placed, brush with melted butter and let sit for 20 minutes.

Bake 30 minutes in middle of the oven, removing before if bites get too golden brown.

Serve with pesto and pizza sauce to dip.
